Yesterday my hamster unfortunately died of old age (I think). When she died she went stiff but now (the next day) the stiffness has gone! Shouldn't she stay stiff?

No, rigor mortis (stiffness) sets in after a few hours but then as time passes the muscles relax for the last time and she will go floppy again.
