You can dull leather and take the shine out of it by washing it with soapy water to remove the oils and waxes that make it shiny. If it's leather clothing, like a leather jacket, wash and dry it in the washing machine to take out its shine. For leather shoes, use a wax stripping product to rub the shine off of them, or spray them with rubbing alcohol to give them a distressed look.
