Some of the nuts I am drying are getting mold on them. Will it hurt the nuts, or does that just mean they are still wet and need to dry more?

They may have some husk residue or moisture on them. You can put them in the oven at 170 degrees for 5 minutes to cook off the residue and excess moisture. If you limit the time to 5 minutes, you wont cook the nut meat.
