Can I completely disconnect one of my hardwired battery backup smoke detectors and leave it off? We have 6 other wired/battery ones in our house. The one I want to permanently disconnect is too high.

You can do that, but it may be unwise, if not also illegal. As a general rule, contractors install only the smoke alarms or detectors required by code, so removal of any of them would likely be a violation of that code. A violation of fire code may cause legal problems.
