At busy times, is it safe to leave the fryer at optimum thermostat temperature with the cover on or should I turn the fryer off and on as needed?

You may want to turn the temperature down if you're not watching the fryer, but if you are exceptionally busy you can leave it on at a high temperature. Make sure all safety protocols are being followed.
