Are the male and female referring to the threads on the adapter? Or to the threads on the two pipes that can be connected with the adapter?

Male and female refers to where the actual thread is. A Male thread is on the outside (think of the thread on a bolt or screw). A female is threaded on the inside, like you would find on the inside of a nut or the socket for a light bulb.
