My guava tree never developed a main trunk. The fruit is heavy for the slender branches. How can I encourage one main trunk and heavier branches?

You follow the main branch that comes out of the ground. If more than one branch comes out, select the thicker and remove the others. Then, cut all branches lower than 80 cm (2.5 ft). If your tree is smaller than 80 cm, cut the branches lower than the half of the tree height.
