Birch Bender's Organic Buttermilk Pancake Mix is the best—all you have to do is add water, which is incredible (since other products will make you add more things). It's super easy to use and has a tangy taste with little bits of sweet, sugary notes; so, it balances out. It also bubbles up nicely has some good leavening agents in it. You get a really nice pancake from it, and you'd presumably get good waffles from it as well.
