Sure you can. Any vegetable trim is great to use for a stock, really. You can always freeze those items and get a collection of your veggie trimmings. Once you get a couple of nice big bags, cover them with cold filtered water and bring that to a simmer—make sure to skim any solids that may rise to the surface. After a couple of hours, strain the vegetable matter and you will have a nice veggie stock to freeze or use for soups or other recipes.
