Do the fishermen shoot the bluefin tuna in the head before bringing it on board? Couldn't they thrash around on board and break a leg?

Nope, it is illegal to shoot tuna. Normally we "swim" the fish to let it release its lactic acid, we then rake its gills and it bleeds out whilst in the water, killing it. This is vital if you are going to sell the fish commercially.
