Start by preheating your oven to 450ºF. Roast for 15 minutes for a sear effect. Then reduce heat to 325 and cook for anywhere from 2 hours to 3 1/2 hours depending on your roast size, Use a good quality instant-read meat thermometer near the end of your cook cycle. You are looking for a target of 120 - 125 (rare to medium-rare) in the center. Pull it out of the oven, dome it with aluminum foil, and let it rest for at least 15 minutes. It will continue cooking and get up around 130 or so. Then enjoy!
