I want to send the video's URL only so that the video isn't in the email. I want the recipient to be able to click the link to see the video whenever he wishes, but it won't show when he opens the email. How do I do this?

Select the text, then click hyperlink, then put in the URL. Then the recipient can click it to get to the video.
