It really depends on what kind of sound you are trying to achieve. For example, if you only have one or two tracks from single mics, you’ll only need 1 channel per track. However, if you’re adding in reverb or other effects, you’ll need more. A good rule of thumb for a basic mixer is to have at least as many input channels as band members.
