My Mac keeps opening .jar files with Archive Utilities instead of Java. I need to open .jar files, but it will just make a folder with Archive Utilities. Any suggestions?

Secondary-click (right-click or two-click) the file, then hover your mouse over "Open With". A list of apps should now appear. Select the app you wish to open the file in. If the app you are looking for is not on the list, choose "Other..." A new window should open now. Set the box at the bottom of the new window to "All", and then double-click the app you want to open the file in.
