No, the egg carton is too small for the herbs to develop roots, unless you are talking about huge goose or mango cartons. The mango/goose egg carton is might hold them in a neat tray, which might be good until the roots get to wide and need a big mason jar to grow in. Then, you can transplant them with care to a big mason jar.
