They have a bevel on the front edge of them. So it can be used two ways, either use it on one side, and it has a certain effect, or you flip it over and it has a different effect. When you're using the flat side, the chisel touches the wood a lot more, so eating into the wood is a lot easier. When you use the bevel side, it's easier to skim across a piece of wood, and you have more control about how much wood you're removing.
