If the date of the event is approaching and you have guests who haven't RSVP's yet, call them and say something like, "We're so excited to have you, but we just want to make sure we have the final headcount for the meal. Do you think you'll be able to make it?" That way, it's more of a warm conversation, but you'll still get the information you need.
