Is there any chance of warping? If I am mounting a collage, for example, the artwork can cause the paper support to be slightly bowed. Will this be flattened out with dry mounting?

If you are doing a collage I suggest to use modge podge or a spray adhesive to hold the prints in place. If not they will not stay positioned and will warp, especially if you live in a hot, dry area.
