I have old kitchen cupboards that were laminated in the 80's with oak hand trim at the bottom. Can I re-laminate them?

Yes, you can. I would use 1/32 inch laminate and contact cement on both surfaces. It will probably be easier if you can bring the cabinets down off the wall. Be sure to rough up the old cupboards to help the contact cement stick too.
