Why doesn't spell check catch two periods at the end of a sentence?

Because it is not a spelling error. However, you can find them yourself. In the "find what" field in the top toolbar, put in two periods. In the "replace with" field, put in one period. Click "Replace all" and that error should be fixed everywhere in your document.
