Crystals can form faster when they have something to grab onto. In unfiltered honey, tiny bits of pollen, wax, or other debris is present for the crystals to use as a base and start growing. Filtration removes a lot of that debris, meaning the crystals don't have an easy place to start. This will dramatically reduce the rate of crystallization in filtered honey.
