Does 'replace the cheesecloth' in the instructions mean I replace it with a new cheesecloth, or put the cheesecloth back?

It means to put the same one back. But if you hang it in a larger jar than needed, you wont have to worry about taking it out at all; then just leave it sit in the refrigerator overnight.
