Weigh a breast and trim it down to 100 grams. Then cook it and weigh it again, take note of the new weight. Now make one perfect sandwich and weigh how much of your cooked 100 gram piece of chicken is left. The difference between what it weighed and what it weighs now is one sandwich. Multiply that by 85 to discover how much cooked meat you need. If cooking it made it much lighter, adjust for that using the figures you got at the start (cooked vs uncooked). The reason I suggest you start with 100 grams is to make the math easier at the end. Make just a little extra for just in case you drop one or something (so multiply your perfect sandwich weight by 90 or 100). Better to have extra than not enough.
