While you can feel free to choose whoever you want to give the knight's crest to, it's generally recommended one of your cavaliers; they're mounted, allowing them to move larger distances and to rescue other units faster. They're also faster, allowing them to not get doubled or even double some enemies that Wallace otherwise can't. While these may seem to be minor now, it makes a huge difference long term.
