Have a variety of treats of different levels of tastiness. Save the 'dull' treats for easy commands such as "Sit" and use super tasty treats for tricky ones such as recall.
The current generation will not change flavors. If you save seeds from plants grown near other varieties, you may end up with a hybrid variety with a different flavor.
