Mr Wonka collected items from the oldest things because he wanted to invent a something that would make people older. It was probably the right way to begin his invention as he wanted to make people older and therefore, the use of old things seems appropriate.

Mr. Wonka collected items from the oldest things, because he wanted to create age; he wanted to create something that would make people older. I think that this is not entirely correct to use old things to invent something that makes people older. Instead, he would have studied the chemical properties  of those things and would have made something that increases this property in other things, which would make people older.
