Break down of fats into smaller globules.

The liver secretes Bile. When bile leaves the liver, it gets stored in the gallbladder, before being released into the duodenum.
When it gets released from the gallbladder, it breaks large fat globules into smaller particles. This is known as emulsification.
As Bile is alkaline in nature, it neutralizes acidic food coming from the stomach to provide the alkaline conditions needed in the small intestine.
